This World War II recipe shows us in the most dire of situations, you have hope and can make something delicious. Something wow-worthy. Something spectacular. Ladies and gentleman, I present to you the
Wacky cake.

Wacky Cake - Vegan and delicious
Ingredients:
- 1 1/2 cups flour
- 3/4 sugar
- 1/3 cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup cold water
- 5 tbsp oil (try something with neutral flavour - vegetable or sunflower)
- 1 tbsp lemon juice (no pulp, only juice)
- 1 1/2 tsp vanilla extract
- Optional
- 2 tbsp walnuts
- 1 tbsp cacao nibs
- 1 tsp coffee.
Method
- Put all the ingredients together in a bowl. whisk till you get even consistency
- pour in a well oiled baking tray
- Bake at 180 degrees centigrade for 30-35 mins. Toothpick inserted in center should come out with a few moist crumbs.
- Cool, serve, relish.
Notes
- I added 1 tsp of coffee to the water and poured it in. It helped enhance the chocolate. Optional but highly recommended
- I added walnuts and cacao nibs on top but thinking of adding it into the dough next time
- I added banana as a replacement to the water. A bad idea. keep the liquid and enjoy the fluffy cake. Banana makes it dense. TLDR, stick to the recipe.
