Rajasthani Khoba Roti - Beautiful bread


Last year we visited Jaipur for a friends wedding. It was one of the most fun trip we've had. Food fun and frolic sums up the trip so well. Food in Rajasthan was just out of the world. It was rustic and hearty. One thing I absolutely loved was Laal Maas and Khoba Roti. Reminiscing about the trip, I baked some Khoba Roti at home. It turned out quite well. 

Khoba Roti

Ingredients
  • 3 cups flour
  • 4 tbsp ghee
  • 1/2 tsp salt
  • Water to make a stiff dough I used about 1 3/4. The dough texture should be slightly more stiffer than chapati dough.
Method
  1. Mix the dough and let it sit for an hour
  2. Pre-heat oven to 180 degrees centigrade. I used a pizza stone for this.
  3. Heat a tava
  4. Roll out the dough, gash the dough with a knife. This doesn't allow the dough to rise and stay flat
  5. Turn the dough to the other side and start pinching the dough to make patterns. Start from the center and go all the way to the edge.
  6. Place the gashed side on the pan till the color turns light brown. 
  7. Once this is done, place the roti in the oven for 10-15 mins or until the top is brown
  8. Add ghee and enjoy with gravy or chutney. It tastes delicious just by itself.
