COVID has limited our travel to the supermarket so what we got in the house is brought to the table. In a recent market trip we found amazing red/green spinach. We generally make an upkari out of the green's we get but this was past day and so we decided to try something new.
Baked Spinach, mushroom, pasta
Ingredients
6 cups roughly chopped spinach - we used red spinach
1 cup mushroom sliced - we used brown mushrooms
1 cup chopped onions
1 tbsp minced garlic
1/4 tsp pepper
1 cup store bought pasta sauce or use boiled tomatoes and grind to paste.
3/4 cup shredded cheese
1 cup cooked pasta - we used Macaroni
1 tbsp olive oil
Let's get started
Step 1 - To a pan, add olive oil and heat it up. Add garlic fry for a minute and add onion. Cook till brown. Add the chopped spinach. Let it cook.
Step 2 - Add mushroom and pepper. Let the mushroom cook. Add the pasta sauce and the pasta. Let it cook on simmer for 5 mins
Step 3 - Pour out in an oven safe tray and cover with cheese. Place in pre-heated oven (180c) for about 15mins till the cheese is melted and you get a golden brown crust on top. Serve hot!
