Healthy, easy and packed with protein. This is something I love munching on. Remove the beetroot and just make it plain. It tastes great too.
Quick and Easy Beetroot Hummus
Ingredients
1 can of chickpeas drained1/2 cup boiled beetroot (boil with a dash of vinegar to retain color)
1 cup olive oil
1 ½ tbsp Tahini
1 tsp lemon juice
½ tsp roasted and crushed cumin powder
½ tsp paprika
1 clove of garlic (add more per your taste)
Salt as required
How I made it.
Step 1 - Add all ingredients to the blender and blend to a smooth paste.
Step 2 - Taste and adjust salt and lemon
Step 3 - Top with olive oil

Step 4 - Serve with bread/carrots/cucumber
Notes
1. Always crush or mince the garlic, key to getting the smooth paste and not a piece of garlic in your mouth
2. Be generous with the olive oil. You could use EVOO to top and plain Olive oil to mix.
3. No Tahini, no problem, just use sesame seeds about 2 tbsp soaked for a few hours to get the nutty tahini taste.
